Ingredients:

For the noodles:

8 oz (225 g) rice noodles or lo mein noodles

1 tablespoon sesame oil

For the beef:

12 oz (340 g) beef sirloin, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon cornstarch

1/2 teaspoon ground white pepper

For the stir-fry:

2 tablespoons vegetable oil

3 garlic cloves, minced

1 teaspoon ginger, grated

1 red bell pepper, thinly sliced

1 cup (100 g) shredded carrots

2 cups (60 g) bok choy or spinach, roughly chopped

3 green onions, sliced

For the sauce:

3 tablespoons soy sauce

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 tablespoon honey or brown sugar

1/2 teaspoon chili flakes (optional, for heat)

Directions:

Prepare the noodles:

Cook the noodles according per package directions. Drain, rinse with cold water, and toss in sesame oil to prevent sticking. Set aside.

Marinate the beef:

Put the sliced beef, oyster sauce, cornstarch, soy sauce, and white pepper in a bowl. For at least ten to fifteen minutes, stir to combine.

Make the sauce:

Put the chili flakes, rice vinegar, soy sauce, hoisin sauce, honey, and a small bowl and mix them together. Remove off the table.

Cook the beef:

In a big wok or skillet set over medium-high heat, warm 1 tablespoon of vegetable oil. Fry the marinated meat for two or three minutes, or until it begins to color. Take it off the heat and put it aside.

Cook the vegetables:

Continue cooking in the same pan with the remaining vegetable oil. For 30 seconds, or until aromatic, stir-fry the ginger and garlic. Toss in the bok choy, carrots, and bell pepper. Once the vegetables are tender-crisp, stir-fry them for three to four minutes.

Combine:

Put the sauce back into the pan with the cooked beef. Combine all ingredients and toss to coat. When the noodles are hot and thoroughly mixed, add them and stir-fry for another two or three minutes.

Garnish and serve:

While still heated, garnish with chopped green onions. As a hearty main course, savor the delectable Asian Spiced Beef Noodles.
