Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 vanilla bean (split and seeds scraped) or 2 tsp pure vanilla extract
- 4 large egg yolks
- 2 cups fresh peaches, peeled and diced
- 2 tbsp granulated sugar (for the peaches)
- 1 tsp lemon juice
Instructions:
1. Heat heavy cream, milk, sugar, and vanilla in a pot to make the ice cream foundation.
2. In a bowl, whisk the egg yolks and temper them with the heated cream mixture. Return to the saucepan and whisk slowly until thickened.
3. Refrigerate the custard for a minimum of four hours.
4. In an ice cream maker, churn the cold mixture and freeze it for a few hours until it solidifies.
5. Combine diced peaches, sugar, and lemon juice for the peach topping and let them macerate.
